This Asian-inspired soup combines flavorful, fresh ingredients for an easy meal. Use chicken or shrimp and your imagination!

COOK TIME: 35 Minutes
Ingredients

2, 32 oz. boxes Chicken Stock
4 sprigs Lemongrass, bruised - OR - 1 1/2 tsp. Lemon Juice
1 tsp. fresh Ginger, grated
1 boneless skinless Chicken Breast, cooked and shredded - OR - 1 cup medium-sized Shrimp
1 box Rice Noodles
1 cup Pea Pods

Optional Additions for Serving:
Basil, Mint, and/or Cilantro
Bean Sprouts
Soy Sauce
Hot Sauce

Directions
Step 1  For Soup::
Pour chicken stock into medium stock pot and and lemongrass (to "bruise", simply crush in hand to flatten) and ginger. Simmer approximately 15 minutes.
 
Step 2  Step 2:
Add chicken to the pot after the stock, Lemongrass, and Ginger have been simmering for 15 minutes. Simmer 15 minutes more.
If adding shrimp, wait to add until the stock has been simmering 25 minutes. Simmer 5-7 minutes more.
 
Step 3  Step 3:
While stock, lemongrass, ginger and chicken are simmering, bring water in large stock pot to boil and follow directions on noodle package to prepare noodles. When done, strain and set aside.
 
Step 4  Step 4:
When stock has simmered for 30 minutes total, add the pea pods and let cook until they turn bright green (about 2-3 minutes).
 
Step 5  To Serve::
Remove Lemongrass sprigs from stock. Put about 1 cup of rice noodles in the bottom of each bowl and pour stock over the top, making sure that each bowl gets some of the meat and peapods.
Serve with fresh herbs, bean sprouts, soy sauce, and hot sauce. Each person can add the amounts they would like of these items.
